Starting off the New Year with a Menu

It is time to start doing a weekly menu again. After all the heavy food consumed over the last 6 weeks I feel heavy and weighed down so all I want is fruit/berries and salad even though mist of it is out of season.

I am also inspired by a friend who has decided to go back to being vegetarian. I have been contemplating doing that myself over the last several months and it really sounds good now. I am not going to be a vegetarian; however, I am going to eliminate meat where I can, I think we as American eat too much meat anyway and I have been doing at least one meatless day a week for a few years.

~This Weeks Menu~

-spinach salad with dried cranberries, walnuts, orange slices and raspberry vinaigrette
-tomato soup with avocado
-mixed berry salad and yogurt
-Southwest Egg rolls, heavy on the spinach
-Chicken Tacos - Chicken for the Hubby and bean for me
-Gnocchi with a tomato sauce and broccoli

I also feel like I've been eating a bit heavier than normal...since Thanksgiving. It kills me to think I should cut back on baking...so far, the fix is to stop thinking about that, lol!

LOL yes that is one way to do it. I don't bake much because then I would have to eat it.

I'm in need of holiday detox as well but I already eat vegetarian several days a week. For me I need to get off the carbs, so I've been making a lot of vegetable soups, sometimes with a little meat for my husband, but no noodles, rice, and minimal potato. Today's soup is leek, turnip, rutabaga, carrot, celery, tomato and black beans (maybe collards or cabbage added at the end, I haven't decided yet). It's seasonal but really light.

I have to give your southwest egg rolls a try. My husband and I used to be fans of the ones from Bennigan's that they served with pineapple salsa. THey were so good!

I can't convince mon mari to go meatless, but I have been cooking less at each meal and he's perfectly happy with that. We only eat it once a day anyway...
